The Spice Cabinet

  • Whole and ground. Cumin, coriander, cardamom and clove keep their character longest when bought whole and ground in small quantities.
  • Tempering. Blooming spices in hot ghee or oil, the tadka, releases aromas that no later addition can match.
  • Restraint. A well-made dish is balanced, not merely hot; heat is one voice among many.
